Although people call the almond a nut, this food is really a fruit. In fact, until they are fully mature some people think of them as a delicacy and eat them although it is very sour. Once they do mature then the shell hardens and is removed. The seed from the inside of the fruit is what most people eat; whether raw or roasted and salted. Interestingly, this is one of the oldest known nuts and has been found in tombs that are more than 3,000 years old in the Mediterranean.

More than two million tons of almonds are produced every year; nearly 80% of these by the United States. The biggest producers are in California and this is a major export for the state. Nearly three billion dollars comes into the country from this export, primarily from the shelled nut.

There are bitter and sweet varieties of almond, but most people are only aware of sweet; this is the only one that is commercially produced. The bitter one can be lethal as this is what is used to make cyanide. The sweet nut is available in many different flavors, including chocolate, salted, roasted, raw, and many more.

While many times this nut is eaten by itself it can also be used in many dishes. Some cakes, cookies, and candies are made from the almond but also savory dishes. Many different types of this are sold, from flaked and sliced, to flour, milk, and butter. Some are used by people on a low carbohydrate diet.

These nuts area great source of protein and healthy fat. They have numerous health benefits; they are good for your heart and nervous system, and they lower the rise in blood sugar after eating. Also, these nuts are an excellent source of vitamin E, B vitamins, and antioxidants. These seeds are also a great source of calcium. Of course, eating too many of anything is not good for you but adding ten or twenty to your daily diet could be a healthy snack.

It is easy to smoke this nut at home by simply putting it on a cookie sheet or pan and cooking it over a flame. Many manufacturers use a version of this but, of course, using factory equipment. Some use cold smoking, which is a method that is both slower and more complicated. Either way, the decision on how to smoke them generally depends on the end purpose.

There are a wide variety of flavors within the smoked almond family. Also, they are easily made at home on a cookie sheet over a flame. Of course, most commercially sold nuts come from a factory. These seeds are a good source of vitamins and are an excellent addition to most diet plans.
